Your wishlist includes a pillow! Now, I know that I’m not that old (only 25 years old), but I CAN still say that I’m getting older. That’s factual. :) Anyway, on my wishlist is the Marriott Pillow. I have the opportunity to travel for my job and I have to say I get the best night’s sleep when I’m at the Marriott and get to sleep on one of those pillows. The only thing that’s keeping me from purchasing is the price … $50 for ONE pillow!?!
Each time I wake up with a pain in my neck from my current pillows, I’m THAT much closer to getting over the cost and purchasing the pillow. It’s an investment right?
I’m still on my quest to learn 25 new recipes this year. This is a new one that I discovered at A Cozy Kitchen. It was simple and had a lot of some of my favorite things. The first time I made it, I just had it by itself … so this could be a good vegetarian dish. The second time I made it, I used it as a side dish. You could also add pasta to the dish to make it more filling.
I made this for myself the first time, so I only used one zucchini. I’d say that one zucchini is one serving. So, if you’re making this for a family, use 3-4 zucchinis. (side note: the plastic container has salt in it)
Here we go …
1 - Wash the zucchini and then cut it into 1/3” slices and sprinkle each side of each piece with some salt
2 - Scoop 1/4 cup of flour onto a plate (use more flour if you’re making this for a larger group)
3 - Heat about 1/4” of olive oil in a small/medium size skillet over high heat. Be careful that you don’t burn yourself from the oil popping out.
4 - “Dredge” the zucchini in the flour … basically coat the zucchini in the flour
5 - After you coated the zucchini and the oil is hot (if you sprinkle a little bit of flour in the oil and it sizzles, it’s hot enough), turn the heat down to medium-high and put the zucchini into the pan in a single layer (you might need to do this in batches until you’ve cooked all the zucchini). Cook for 1-2 minutes on each side.
6 - Put the cooked zucchini into a baking dish and top each piece with a small spoonful of your favorite marinara/tomato sauce
7 - Tear pieces of fresh mozzarella and put a piece on top of each zucchini
8 - Sprinkle a little bit of basil and grated parmesan on top and you’re ready to put it in the oven!
Put the dish into the oven at 325 - 350 degrees (depending on your oven) and bake for about 20-25 minutes until the cheese has melted and is bubbling.
